Introduction
The history of Cheddar Cheese goes a long way back. This relatively hard, yellowish and sometimes sharp-tasting cheese gets its name from the village of Cheddar in Southwest of England. History
In 1903, James L. Kraft, an immigrant from Canada set us a successful business of merchandizing cheese in the Chicago market. To reduce wastage, Kraft tried packaging cheese in jars, and then began experimenting with cheese canning — an idea which had seen some success in Switzerland. It was at this time that James stumbled upon a method that halted the natural aging of cheese during processing, and produced a wonder which became known as "Processed Cheese" (patented in 1916).
By the 1930s the originality of Kraft's processed cheese had given the company 40 per cent market share of the lucrative American market, and the rest is history.
